Rieslings are slowly pressed after 12 hours of maceration and fermented in oak barrels using their own yeast. The winemaker strives for minimal intervention, believing that the quality of the wine is formed in the vineyard, and not in the cellar. Rieslings sit on their lees for a long time, sometimes up to nine months, before being bottled.

For Pinot Noir, the winemaker uses high-pressure maceration in high-pressure tanks, which gives the wines intense color and subtle tannin and extract characteristics. The wine is aged in large old wooden barrels.
